Why do I get a headache if I don't drink my coffee?

If your coffee contains caffeine, that is the reason why. Caffeine stimulates your adrenal system to produce a very powerful hormone that causes the blood vessels to constrict. When the caffeine stimulus wears off, the blood vessels will dilate. If the blood vessels dilate unevenly (which is common), you will get a headache.
