Mashed Cauliflower

  1 head cauliflower  
5 large cloves garlic, peeled  
Sprinkle of salt  
½- ¾ tsp. salt  
½ to 1 tsp. pepper (start with smaller amount and taste)  
2 Tab. mayonnaise  
1 Tab. dried chives  
   

Peel off leaves and rinse cauliflower. Chop. Put in steamer basket with garlic and sprinkle with salt. Cover. Steam 15 min. or until tender. Drain in colander. Mash in food processor with all remaining ingredients except chives. Add chives and pulse to mix, otherwise cauliflower will be green-tinged. This is a very creamy and tasty mashed-potato substitute.

Note: Use a hand-mixer if you don’t have a food processor or blender.
