Until about five years ago, I had seemingly unsolvable bowel problems, beginning in early childhood. Due to bad diet choices and ignorance of good food habits, I had a weekly enema administered by my mother. I suffered through the teen years, motherhood years, and working years, with the wheel of constipation/diarrhea, constipation/diarrhea/constipation/diarrhea, cramps, etc. Then about five years ago an M.D. said, "Well, you probably have colon cancer, and it has probably spread to your liver and gallbladder as well. We'll do some more tests. Come back in two weeks."
A nurse friend said, "Call Karen Hurd. She knows more about colons than anyone."
Karen said, "I believe you don't have cancer." She prescribed the 'white diet' (white bread, white rice, potatoes, cream of wheat, plain noodles...) for three days, to let the gut heal from sixty-some-odd years of abuse. Then she said overcooked veggies for 2-3 days. Then gradually adding legumes and other veggies and avoiding animal fats I was soon eating rather normally, and, thanks to the legumes, having NORMAL, REGULAR bowel movements for the first time since I could remember. Karen said, "You must eat beans every day of your life!"
I indeed did not have cancer. But I did have Karen to put me on the road to a normal healthy colon, and with very easy, sensible, low-cost, healthy foods. I feel fortunate beyond expression that I was blessed with Karen in my life.
First of all, I'd like to thank you for your website and information on eating beans! Ever since my husband and I began eating beans, my ulcerative colitis and his IBS have been much better. We only seem to have problems if we skip beans for a few meals in a row, or if we eat too many unhealthy and/or sugary foods. The Lord has used you to provide a path of healing through eating nutritious foods, and I am just so thankful! My prayer and goal is to be completely symptom-free by the time I am pregnant with our second child, and at this point, that seems like a very realistic goal. Just over a year ago, I thought UC was something I would have to live with forever and that it would only get progressively worse and lead to more serious medications. Thank you for providing wholesome, natural solutions that the medical doctors were unable to provide or even consider. The only thing my doctors told me about food is that my condition had nothing to do with what I ate or didn't eat. I just can't thank you enough for your help and for the Lord's leading in your life to help others heal through eating well!

I cured myself of IBD after following Karen's white diet plan, and felt fabulous. Unfortunately, I got too confident and one night ate like the devil - red wine, mountains of fat-laden crisps - and started suffering. Urgent toilet trips, mucous in stool, etc. Karen told me to go back on the white diet, and after a few days that I could return to eating regular good foods. I was happy to do this, since it meant an end to my symptoms (and I have also truly learnt a very big lesson about not eating like the devil!).
I have been spreading the word around work to colleagues and family and friends about Karen's website. Quite a few of my friends are interested in doing the white diet and using your information to better their eating habits. Thanks again, Karen!
